Don't count on it.

You successfully added the spell to Sarnor's spellbook at the time indicated.

No, you gain the same amount of HP/MP that your maximum increased by.

Your 'Enchanted Arrows' stance does indeed get doubled by the Hunting Bow's proc.

Missed attacks and maneuvers generate the same threat they would have on hit.
- Complexity Begins Here:
You roll both your own block chance and counter attack chance. Both require the expenditure of an AoP, so in your current state you could only do one. Certain effects (like channeling) ask you to spend an AoP actively on your turn. Other effects (hitting a ranged attacker) allow you to spend an AoP that you did not use in a round (actively) to take additional actions in the next combat round. Normally these actions occur in a special priority phase before the intuitive order, like the opposite of how Sarnor can knock people to a special phase at the end of the round.
When and if you get attacked in a round, if you didn't spend all your AoPs that round, you can roll your block chance and counterattack chance. If you get a block, you can spend the leftover AoP to negate the hit on you (including any procs, so let me know you blocked). If you get a counterattack, you can attack the target on your next turn in the priority phase, along with your normal action and any AoPs you'd have on that round. If you get both a counter attack and block, you would have to have a extra AoP for each.
